Pumkpin Chia Pudding

Pumpkin Chia Pudding Serves:  2-3 Ingredients 1.5 cups almond milk ½ cup pumpkin puree 1 scoop Shaklee Protein (Vanilla 180 is best) 2 tablespoons almond butter (or other nut or seed butter) 1 tablespoon raw honey 1 teaspoon vanilla extract 1 teaspoon cinnamon ¼ teaspoon nutmeg ⅛ teaspoon ground ginger ⅛ teaspoon ground cloves pinch of salt ¼ cup chia seeds extra almond milk for topping Instructions Blend all ingredients, except chia seeds, until smooth. Place the blended mixture into a resealable large jar (or 2 smaller jars) then add chia seeds. Seal jar and shake. Place in refrigerator overnight or for at least 3+ hours. I shook my jars once in between to make sure they didn’t become too gelatinous. Pour some extra almond milk on top and eat up. Breakfast, snack or post workout recovery is served!

Pumpkin Pucks

Pumpkin Pucks *optional 1/3 cup mini dark chocolate chips and/or chopped nuts 1 cup organic pumpkin 1 cup organic almond butter 1/4 cup honey 2 T. pure maple syrup 2 eggs 1/3 cup almond flour 1 T. cinnamon 1 teaspoon nutmeg 1/2 teaspoon sea salt Whip pumpkin and almond butter together Add honey and syrup and beat in egg one at a time Add dry ingredients to wet ones, combine Fill muffin tins 3/4 full..decorate top(optional. Bake 20 min at 350:)

Pumpkin Dip

1/2 cup Plain Greek Yogurt 1 scoop Vanilla or Vanill Chai Shaklee protein  2 T. canned organic pumpkin 1 T. pumpkin pie spice 1/2 t. vanilla extract(optional for sweetness) mix well and enjoy as a fall dip for apples, bananas, etc. also amazing as a snack with granola over top..mmm!

Pumpkin Smoothie

 Mary's Pumpkin Latte Protein Smoothie  -8oz. Milk -3-4 Ice Cubes -2TBSP of Organic Canned Pumpkin -1TBSP of Pumpkin Pie Spice -2 Scoops of Shaklee 180 Vanilla Chia or Vanilla or Latte Smoothie mix -Sprinkle a little Cinnamon on top and if you want to a a little extra sweetness put a tad bit of vanilla extract in as well!!!

Summer Oats

SUMMER OATS 1 Scoop Shaklee protein powder 1/2 tsp. cinnamon 1/3 cup organic rolled oats or gluten-free oats 1 T.ground flaxseed 1 T. psyllium husk 1 T. wheat germ 1 T. hemp hearts 2 T. raw walnuts or almonds 1 tsp. raw honey 1/2 c. plain, greek yogurt 1/2 cup almond milk or coconut milk 1/3 c. organic blueberries or raspberries **modify or adjust recipe to your likings...if you don't have hemp on hand or psyllium husk it will still be amazing! *try something new:) 1. Mix dry ingredients together in a bowl.  2. Add wet ingredients, expects berries. Stir to combine with dry ingredients. 3. Refrigerate overnight. In the morning , top with berries and serve~or pack in a container and take it to go. *If it seems real stiff just add a splash of almond or coconut milk and stir. MAKES 2 SERVINGS!!! Best Shape of Your Life Challenge

I am so excited to announce my Best Shape of Your Life 4 Week Challenge! I have put together an eating plan that is geared towards organic clean eating paired with a touch of Paleo, Zone, and all organic supplementation:) My first group launched June 2-June30...24 amazing ladies are on this journey together, and doing amazing! They are learning how to add in good carbs from veggies, lean protein in measure, eat 5 times per day, enjoy their amazing green smoothie daily, and supplement with the best daily. Adding in Shaklee multi vitamin/mineral, fish oil, as well as probiotic daily has really enhanced their results and cut down on inflammation~the lead into many diseases.  I will be offering a new 4 Week Challenge in August...only 20 spots available:) Blessed and excited to be a part of so many positive changes in health and wellness:)

Paleo Shepards Pie

Paleo Shepherd’s pie Ingredients Topping 1-2 bags (16 ounces) frozen cauliflower florets 1 garlic clove 1 ½ Tbsp coconut oil ½ C Coconut milk Salt and pepper to taste 1 Tbsp chives Casserole 1 ½ Tbsp coconut oil 1 medium onion, diced 2 carrots peeled and diced, or mushrooms, squash, veggies! 2 cloves garlic, minced 2 pounds ground lamb or organic ground beef or turkey Salt and pepper to taste 1 Tbsp tomato paste 1 C beef or chicken broth 1 tsp dried rosemary ½ tsp dried thyme 3 egg whites Paprika for garnish Directions *Preheat oven to 400F *Cook the cauliflower according to the package directions until it’s very soft, but not waterlogged. In a microwave safe bowl or small saucepan =, heat the garlic, coconut oil, coconut milk, salt, and pepper, about 1 minute *Meanwhile, puree the cauliflower in the bowl of a food processor, scraping down the sides. Green Goddess 180 Smoothie

8-12 ounces water 2 scoops Strawberry 180 Smoothie Mix 1 handful  organic spinach 1 handful organic kale 1 orange 1/2 banana handfull organic blueberries **can add 1-2 Tablespoons plain greek yogurt for added protein and deliciousness **can add 1 T ground flax or 1 T. coconut oil for a little healthy fat:)

Mediterranean Stuffed Tomatoes with Quinoa SEPTEMBER 12, 2011 These stuffed tomatoes are the brainchild of two recent dining experiences. While in Boulder, my friend Kirsten and I enjoyed tapas and happy hour at  The Med  (if you’re ever in Boulder, I insist that you do the same!). We ordered a smorgasbord of appetizers and went gaga over one in particular, which was just a ramekin of baked tomatoes, feta, artichoke and kalamata olives. That spread will become a post of its own soon enough, but the combination of ingredients inspired this pretty dish. A few weeks later, I experienced my first stuffed tomato at my mom’s birthday dinner. After placing my order, my dad mentioned that  my grandmother Mimi  used to make stuffed tomatoes, which piqued my interest. I cut into the pesto and cheese stuffed tomato and oil exploded onto my plate—not the most appetizing effect. It was good, but I knew it could be better. When it came to making my own stuffed tomatoes,...

Enchilada Soup with Avacado

*1 T olive oil or coconut oil *6 cloves garlic *1 T cilantro chopped *8 corn tortillas(TJs) *8 portions chicken breast(about 2 lbs) *1 can tomatoes(organic) * chopped onion *6 cups organic chicken broth *2 cups water *1 can organic tomato paste *1 T cumin *1-2 cans rinsed organic black beans *2 tsp chili powder or TJs taco mix *2 bay leaves *ground red pepper to taste *1 avacado ***serves 8 Saute oil, garlic and cilantro about 3 minutes. Chop 4 tortillas into 1 inch squares and add to pot, saute 5 min. Add chicken, tomatoes, onions, broth, water, tomato paste,black beans, and bay leaves. Bring to boil. Reduce heat to low and add red pepper. Simmer about 30 min. Bake other 4 tortillas(cut into strips) in oven at 400 till browned about 7 min. remove bay leaves and serve. Add tortilla strips, avacado, cheese if desired... ***I love a dollop of greek yogurt on top, fresh cilantro, fresh tomatoes, and jalepenos...:)

Energy chicken

Swiss chard chicken with grapefruit 1 bunch Swiss chard,rinsed and stems removed 1tablespoon coconut oil or olive oil 1 cup sweet  onion chopped 2 carrots chopped 4 cloves garlic 6oz chicken breast cubed 2tablespoons chicken broth 1cup quinoa 1tablespoon tamari sauce 1teaspoon black pepper 1 grapefruit, peeled and cut into sections Preheat oven to 350 Chop chard into 1/4 inch strips Sautéed oil, onion and carrots till soft about 5 min. Toss in  garlic Add chicken and cook till no longer pink Add chard and broth or water. Cook on medium till chard has wilted, 5 min Add quinoa and heat through. Season with tamari and pepper.  Serve with heated grapefruit on top...serves 2
